- is from my alma mater, the University of Georgia (woof! woof! woof!)
- includes resources, both web pages and PDF manuals, for non-freezing food preservation, like vegetable drying and jelly making
Why care? I think we’re going to have reorient our ideas towards food. Environmental degradation, the increasingly perilous petroleum costs of mainline agriculture, and our own toxic relationship with food suggests a new culture for food. Indeed, food may again become a lively subject of theological reflection and concern. In short, we need to respect it and food preservation is an important skill worthy of being learned. At the least, we ought to have handy references.
Taking care of food may well mean taking care of our inner and outer selves, too.
